This traditional Maharashtrian and Gujarati dessert is made with thick hung curd, sugar, cardamom and saffron. It is wonderfully creamy, mildly sweet and incredibly easy to prepare at home. This Ganesh Chaturthi, brings a little extra sweetness to your celebrations with this simple Shrikhand recipe, prepared with the help of a Mumma’s Life Kadhai.
Ingredients for Shrikhand
500 g thick full-fat curd
¾ to 1 cup powdered sugar, according to taste
½ tsp cardamom powder
A few strands of saffron
1–2 tbsp warm milk
2 tbsp chopped pistachios
1 tbsp chopped almonds
A pinch of nutmeg powder, optional
How to Make Shrikhand at Home
1. Prepare the Hung Curd
The secret to smooth and creamy Shrikhand is thick curd. Place the curd in a clean muslin cloth, tie it securely and hang it for several hours. You can also keep it in the refrigerator overnight to allow the excess water to drain.
Once the water has drained completely, you will be left with thick, creamy hung curd.
2. Add Sugar and Flavour
Transfer the hung curd to a large bowl and add powdered sugar. Mix it gently until the sugar blends completely with the curd.
Soak the saffron strands in warm milk for a few minutes. Add the saffron milk, cardamom powder and a little nutmeg powder to the mixture.
Whisk everything until the Shrikhand becomes smooth and creamy.
3. Add the Festive Touch
Now comes the fun part! Add chopped pistachios and almonds to the Shrikhand and mix gently. Keep a few nuts aside for garnishing.
For an extra festive flavour, you can add a few more saffron strands on top.
